Yummy Creamy Chicken Penne
Marina, our Insurance Restoration Project Coordinator, loves to experiment and try new recipes. One of her favorites in her current rotation is this Chicken Penne with Bacon and Spinach in a Creamy Tomato Sauce. Its a delicious, stick-to-your-ribs dish that is perfect for cold winter nights. Spicy Korean BBQ Beef
Our Marketing Coordinator, Gates, grew up eating Korean food all the time and loves incorporating it into her weekly menus. Her favorite is Bulgogi, a BBQ shaved beef with a sweet marinade. You can buy the marinade pre-made, but Gates suggests instead taking a visit to your local Asian market for authentic ingredients. She serves the bulgogi with white rice, kimchi (pickled spicy cabbage), and steamed broccoli. You can find the recipe here
De-Stressing Post-Election: A How-To Guide
1. Digitally Detox: Get away from your phone and spend time doing things that bring you joy. It’s not the end of the world for you to miss the latest news headline or Instagram post every once in a while.
2. Spend time with loved ones (the one’s that don’t stress you out): Friends and loved ones are great people to unwind with, granted that said loved ones won’t stress you out!
3. Get some exercise: Find a type of exercise that makes you happy- jogging, yoga, dancing, swimming, and get out and do it! Even a walk around your neighborhood can do a lot to clear your mind and lower stress levels.
4. Meditate: It may seem hard, as a beginner, to meditate, but it works wonders when it comes to lowering stress levels. Find a five minute guided meditation on YouTube, find a quiet environment and breathe deeply.
